Have you tried using ground Sichuan peppercorns and salt instead of the chilli? That's damn tasty too.

LOL.. that was cool man. I never tried fried squid before, I'm going to have to try this out.

Yeah, it's way better to add the chili after cooking. Gets kinda burnt if you add it to the batter, and changes the texture a bit too.
